I'm pleased you included the caveat 'The assumption is that unsaturated fats are healthier for humans than saturated fatty acids' - I think it is an assumption worth questioning. The respected Food Programme on BBC radio 4 recently ran an article on top food scientists who believe the dangerous fat is unsaturated omega-6 fats (most vegetable oils) as they cause inflamatory responses in blood vessels. They stated that saturated fats in the diet are really no problem.
I'd like to point out that human flesh is naturally high in saturated fat, as is breast milk. Are we saying evolution got it wrong? Surely dairy and animal fats cannot be blamed on the recent epidemic of obesity, as they have been eaten for centuries. Surely the problem is with a more modern problem - the massive increase in refined carbohydrate consuption perhaps?
