The soybean
is a very rich source of essential nutrients and one of the most versatile
foodstuffs. Well known to the ancient Chinese, soya spread to the rest of the
Orient when traders took soybeans with them on sea voyages. The crop remained
unknown in the West until the 20th
century. Today, soya is one of the world’s major crops, grown in 47 countries.
